The invention provides a dairy product obtainable by a process which comprises: a) providing a milk-based substrate comprising lactose; and b) treating said substrate with an enzyme composition comprising lactase activity, wherein at least a part of the lactase activity is provided by a polypeptide having an amino acid sequence which comprises the sequence set out in SEQ ID NO: 1 or SEQ ID NO: 2, a truncated version of either thereof or a sequence having at least about 60% sequence identity to any thereto, and wherein the enzyme composition has reduced arylsulfatase activity, invertase activity, lipase activity and/or amylase activity.
