PROBLEM TO BE SOLVED: To provide a polished rice cooling treatment method in a stage before rice cooking of reducing melting of sweetness from polished rice in rice washing, and to provide a rice cooker.;SOLUTION: A rice cooker includes: a polished rice soaking part for storing measured polished rice and water for rice washing and soaking; a rice cooker body B for storing the polished rice soaking part and having a rice cooking function; a lid part C provided on the upper part of the rice cooker body; a rice washing fin F for driving rice washing by a drive motor M; a cooling part G for cooling water for washing and soaking polished rice in the polished rice soaking part; a pump P for supplying water for washing and soaking rice; and a flow part I for measuring an amount of water to be supplied to the polished rice soaking part. A polished rice cooling treatment method in a stage before rice cooking limits a temperature of rice washing water for rice washing, and a temperature of soaking water for soaking and cooling polished rice to 2-5 degrees in a step from washing polished rice to rice cooking.;SELECTED DRAWING: Figure 1;COPYRIGHT: (C)2019,JPO&INPIT
