To provide a preservation method of raw garlic and garlic preserved by the preservation method in which the germination and root-germination of the raw garlic are suppressed, and a state of the raw garlic in the harvesting can be maintained.SOLUTION: A preservation method is provided in which the root and stem of the harvested raw garlic are cut off, and the raw garlic having the root and stem cut is preserved in an atmosphere of -2-0°C under dark conditions without performing drying treatment. As a result, the germination and root-germination of the raw garlic are suppressed, and a state of the raw garlic in the harvesting can be maintained. Accordingly, the garlic preserved in substantially the same state in the harvesting can be continuously provided until the harvesting time of the next year.SELECTED DRAWING: Figure 1
