To provide a production process of soybean cake having a high content of soluble protein that belongs to an area of chemistry, particularly a production process of soybean cake containing soluble protein whose content in KOH attains 60 to 75%.MEANS FOR SOLVING THE PROBLEM: In the process, a soluble saccharide is firstly taken out by countercurrent extraction from soybean cake with a water-soluble ethanol solution by a single integrated industrial unit without intermediate desolvation and then an oil is extracted with hexane. The production process of soybean cake having a high content of soluble protein includes: 1. a process for preparation of soybean; 2. extraction with ethanol; 3. decantation of solids; 4. distillation of ethanol; 5. hexane extraction; 6. decantation of a water phase and an organic phase; 7. distillation of hexane; 8. desolvation; 9. condensation of a solvent; and 10. drying and cooling of cake. Through the process, an SPC cake having such characteristics of a crude protein content of 58.3% (relatively) and a soluble protein content in -KOH of 60.9% is produced.SELECTED DRAWING: Figure 1
