The present invention relates to a method of heating a liquid product rapidly and uniformly to a predetermined temperature by resistance heating.In accordance with the present invention, sufficient and effective microbial inactivation is achieved by applying the electric field strength below 5.0 kV / cm to select relatively low electric field strength and relatively extended pulse duration.The method of the present invention is efficient at neutral pH and pH less than 7.Moreover, the method of the present invention is efficient to deactivate a wide range of associated microorganisms.The present invention further relates to a method in which a liquid product is preheated prior to providing the liquid product to the method.The present invention relates to a liquid product obtained by a method according to the present invention.
