PROBLEM TO BE SOLVED: To provide an evaluation method and evaluation device of a rice kind allowing rapid and quantitative evaluation using a small amount of sample.SOLUTION: The evaluation method includes: a gelatinizing process (step S1) of gelatinizing a rice kind as a sample by dipping it into a gelatinization solution; a separating process (step S2) of separating the solution from undissolved rice kind after the gelatinizing process; a complete gelatinizing process (step S3) of adding an alkaline solution to the solution obtained in the separating process and further heating them; a detecting process (step S4) of detecting the starch concentration in the solution obtained in the complete gelatinizing process using an iodine starch coloring reaction; and an evaluating process (step S5) of evaluating the rice kind on the basis of the correlation between the elution starch amount and a rice-kind characteristic value.SELECTED DRAWING: Figure 1
