obtaining orange juice powder (citrus sinensis) by spray dryer. The present invention relates to a method for obtaining orange juice (citrus sinensis) in powder form. The orange juice (citrus sinensis) was dried in a spray dryer with air inlet temperatures between 140 to 160ºc with addition of carrier agent (maltodextrin) at mass concentrations between 15 and 25%. The powders obtained were characterized by ph, soluble solids (ºbrix), water activity, moisture content, ascorbic acid (vitamin c) content. The final product showed conservation of physicochemical characteristics compared to fresh juice.
