a cooking system for cooking a product stream using steam. A steam supply is supplied at a supply pressure that is regulated by a control unit (20) to a regulated pressure. The steam supply is supplied to a plurality of steam injection stoves (18) which are positioned within a product supply line receiving a product stream. the product stream is cooked as the product stream passes through the product supply line (12) and the plurality of stoves. Each of the steam injection stoves includes a steam modulator that controls the amount of steam injected. By regulating the vapor pressure and the steam modulator, the control unit can modify the amount of shear created within the product flow and control the fluid temperature. The cooking system further includes an on-site cleaning system which can inject a cleaning solution into the steam supply line and the plurality of steam injection stoves.
