A sap extracting device, system and method for extracting sap from inflorescence are disclosed. The device is installed on the tree for inflorescence extraction. initially, using a cutter, a portion of the inflorescence tip is cut off. Sap exuding from the cutting surface is collected using a collector. sap formation on inflorescence is stimulated using a stimulator. A programmed controller controls the various operations of the cutter, collector, indicator and stimulator. A linear actuator is used to move the cutter, stimulator and collector together or individually at a predetermined time so that the cutter can cut the next available tip portion of the inflorescence. Single or multiple sap extracting devices can be connected to the storage by piping to collect sap and to be instantly cooled. Vacuum pressure is applied to the tubing as well as to the collector's suction head to improve sap flow.
