The present invention relates to a process for producing a mutant yeast fgyo5o (jay25o ura3 30 / ura3 / 30) of the ura3 gene of saccharomyces cerevisiae industrial strain stone-2 comprising the steps of: (a) deletion complete one of two copies of the yeast ura3 gene using an integration cassette; (b) deleting the second copy of the ura3 yeast gene fgyo1o with the aid of an integration cassette; (c) removal of the core cassette of the 2nd copy of the ura3 locus of the yeast genome fgyo2o using the homologous repair fragment; (d) removing the hph cassette containing the hphmx4 genetic mark from the yeast genome fgyo3o using the core cassette; and (e) removing the genetic markers kanmx4 and ki-ura3 from the fgyo4o strain using the homologous repair fragment. The present invention also relates to the use of yeast to metabolize diverse sources to produce different industrial metabolites selected from the group comprised of alcohol, glycerol, ethylene, propene, biodiesel, hydrocarbons, specific proteins.
