processes for producing and modifying a food co-product, process for enhancing the conversion of starch from plant material to ethanol, and process for ethanol fermentation of plant material a process is disclosed for producing a food co-product by fermentation of ethanol from plant material comprising starch and another selected polysaccharide a. from the group comprising hemicellulose and cellulose. the process comprises: (i) performing a primary fermentation process, distilling the primary fermentation mixture to form a primary food co-product derived from the fermentation of the primary fermentation mixture and a primary distillate comprising ethanol and (ii) performing a process secondary fermentation and distill the secondary fermentation mixture to form the modified food co-product and a secondary distillate comprising ethanol.
