The present disclosure is related to an extruded expanded cereal type food for breakfast and its manufacturing process. These extruded cereal-type breakfast foods are obtained by extrusion from mixtures of blue corn flour, amaranth flour and extruded and non-extruded beetroot flour with or without flavorings. The expanded snacks obtained immediately after the extrusion process are ready for human consumption. The extruded, expanded, cereal-type breakfast products that are generated, in addition of being fat-free, they provide basic nutrients such as carbohydrates, protein and dietary fiber and with high content of antioxidants so the same can be considered as an extruded, expanded cereal-type breakfast, that nutritious and functional. They can also be considered as natural and harmless foods. These extruded, expanded, cereal-type breakfast products can be eaten alone or in combination with other foods and beverages.
