Disclosed is a process of producing cermai fruit vinegar comprising the steps of: preparing the needed ingredients such as cermai fruit, brown sugar; washing and removing the seeds of the cermai fruit; blending the cermai fruit in the food processor for 4-5 minutes; extracting the processed fruit utilizing cheese cloth; measuring 750 ml of cermai fruit extract; adding 120 g brown sugar to the 750 ml cremai fruit extract; stirring the mixture until the sugar is dissolved; pouring the mixture in a bottle; covering the poured mixture with cheese cloth and tighten with rubber band; and fermenting the covered mixture in a safe and well-ventilated area for at least 4 months.
