Disclosed is a rapid flower-shaped cutting structure for a short sausage, comprising: a pipe cylinder (3) with an inner diameter greater than that of a short sausage (a), a pushing structure and a cutter structure, wherein the pushing structure comprises a pushing rod (1) and a first pushing air cylinder (21), a power output end of the first pushing air cylinder (21) is connected to a tail end of the pushing rod (1), a head end of the pushing rod (1) is provided with a pushing head (11), the thickness of a front part of the pushing rod (1) is gradually increased from an edge connected to the pushing head (11) to an outer wall of the pushing rod (1), so as to form a reset inclined plane (12), and the pushing head (11) is located inside the pipe cylinder (3); a wall of the pipe cylinder (3) is provided with a cutting window (31), with a head end thereof being radially provided with a plurality of cutter grooves (32); and the cutter structure comprises a ring-shaped cutter holder (4), with a crossing blade combination (42) corresponding to the cutter grooves (32) being provided in the ring-shaped cutter holder (4); and further comprising two guide rails (5) axially arranged along the pipe cylinder (3). The rapid flower-shaped cutting structure for a short sausage is simple in structure, low in costs and fast in terms of flower-shaped cutting speed, and is very suitable for use in large-scale production. In addition, the structure is specifically designed for short sausages, and is uniform in terms of the cutting shapes.
