The present invention relates to a process for quantitative determination of impurities in the form of fatty acid esters in aircraft turbine fuels, wherein the analyte is subjected to a chemical reaction selective therefor which affects the intensity of the carbonyl bands of the respective ester groups to form a modified analyte and the change in the concentration of analyte in the sample is measured using the decrease in the intensity of the carbonyl bands and/or the increase in the concentration of the formation of the modified analyte using the increase in the intensity of a band characteristic for the modification.
