A method for preparing a slowly-digested sugar, comprising the following steps: a step of spraying and liquefaction, a step of saccharification and transglucosidation, and a step of purification and concentration; in the spraying and liquefaction step, the liquefaction process controls the dextrose equivalent (DE) value to be between 9-12; in the saccharification and transglucosidation step, the DE value after saccharification and transglycosylation is between 35-60; the step of purification and concentration comprises a chromatographic separation process.
