The present invention relates to a color formation sensor manufacturing method capable of determining the aged degree of apples with naked eyes and a color formation sensor manufactured by the method. According to the present invention, the color formation sensor manufacturing method for determining the aging of apples comprises: a step of preparing a solution in which methyl red, methyl red sodium salt, and sodium hydroxide are dissolved in a methanol solvent; a step of adding the solution and a binder for printing and producing ink for printing; a step of forming a detection unit by printing the ink for printing on printing paper through a printer; and a step of drying the printed paper. The color formation sensor manufactured by the present invention: enables anyone to check the aged degree of fruits with naked eyes by being able to determine the aging of fruits and vegetables easily with naked eyes; and enables the accurate determination of the aged state of fruits by providing the color formation sensor having a slow reversible color change.
