The present invention relates to a method for preparing fermented coffee, comprising the steps of: (a) inoculating steamed coffee beans with Bacillus amyloliquefaciens and Lactobacillus plantarum strains; (b) fermenting the coffee beans inoculated with the strains of the step (a); and (c) drying and roasting the fermented coffee beans of the step (b), and to fermented coffee prepared by the method. The fermentation conditions and roasting conditions are optimized to provide fermented coffee having high polyphenol and flavonoid content.
