The present invention relates to a method for promoting the production of antimicrobial protein of the microorganism having effective antimicrobial activity towards pathogenic bacteria. By introducing hydrophobic residues into the polysaccharide to be fed to the microorganism, the nanoparticles with small particle size are developed and treated with lactic acid bacteria to produce lactic acid bacteria with promoted production of the antibacterial protein and the antibacterial protein produced by the lactic acid bacteria. The lactic acid bacteria with promoted production of the antibacterial protein and the antibacterial protein produced by the same can be used not only as an antibiotic substitute material but also as food natural preservatives commercially.
