The present invention relates to a method for preparing graphene oxide with liquid crystallinity through interaction of a water-soluble polymer, and more specifically, to a method for preparing graphene oxide with liquid crystallinity, which comprises the following steps: adding the graphene oxide to water to prepare a graphene oxide suspension; mixing the water soluble polymer with the graphene oxide suspension; and evaporating the water in the mixed graphene oxide suspension under vacuum to increase the concentration of the graphene oxide suspension. The method for preparing the graphene oxide with liquid crystallinity through the interaction of the water-soluble polymer according to the present invention can be effectively inhibit vitrification when the water-soluble polymer is added to the graphene oxide suspension.
