The present invention relates to a method for producing a fermented product of aged sprout ginseng extract in which a hangover curing effect is enhanced; a fermented product of aged sprout ginseng extract produced by the method; and a pharmaceutical composition and functional health food for curing hangover, containing a fermented product of aged sprout ginseng extract as an active ingredient. The present invention comprises a step of aging sprout ginseng, a step of extracting the aged sprout ginseng by adding water, a step of sterilizing the extract, and a step of fermenting the sterilized extract.
