The present invention relates to an individually quick frozen (IQF) technique to enable long-term distribution of shellfish such as mussels and clams, which includes a pretreatment step for washing and releasing mud or water sediment out of shellfish in a state where the shells are not removed; a screening step for picking up low-quality products whose shells are damaged through the pretreatment step; a steaming step for allowing the normal shellfish picked through the screening step to be steamed in a shell state; a cooling step for cooling the steamed shellfish in cold water; an IQF treating step for freezing the shellfish using the IQF method; and a packaging step for packaging the shellfish treated with the IQF method.
