The present invention relates to a production method of an enzyme fermentation product using vernalized barley, an enzyme fermentation product produced therefrom and a food comprising the same. The production method comprises the steps of: (A) increasing the water content of mixed cereals comprising the vernalized barley, rice bran and separated soy protein in a water content state of 37 to 45%; and (B) inoculating a strain in the mixed cereals increased in the step (A) and culturing the same, thereby increasing the content of two enzymes and lowering the sugar content compared with conventional enzyme fermentation products.
