The present invention relates to a method for processing Angelica gigas Nakai using hot melt extrusion and Angelica gigas Nakai colloidal dispersion produced by the processing method. More particularly, the present invention relates to a method for processing Angelica gigas Nakai, which comprises the steps of: (1) cutting Angelica gigas Nakai to a size of 3-5 mm and drying the same to have a water content of 20-80%; (2) adding and mixing an ionizer and a transporter to the dried Angelica gigas Nakai; and (3) producing colloidal dispersion by hot melt extrusion using a melt extruder after the step (2).
