The present invention relates to a method for producing oriental melon pickle and oriental melon pickle produced by the method. The method comprises the steps of: (1) adding Hovenia dulcis, bay leaves, red beans, pepper, onions, licorice, Astragalus membranaceus, pears, and radishes to water, heating and filtering the mixture to prepare a herbal extract; (2) cutting the oriental melon, removing ovaries and faucets, and salting the oriental melon in salt water; (3) mixing the herbal extract prepared in the step (1) with vinegar and sugar to prepare a salting liquid; and (4) washing the salted oriental melon of the step (2) and submerging the oriental melon in the salting liquid prepared in the step (3) and aging the mixture.
