The present invention relates to a liquid-type health supplement food using Curcuma longa, and a preparation method of the same. According to the present invention, the preparation method of the liquid-type health supplement food using Curcuma longa comprises: a first step of immersing Curcuma longa in alkaline water containing gellan gum, and extracting from Curcuma longa, thereby producing an extract of Curcuma longa; a second step of mixing the extract of Curcuma longa with Lactobacillus culture fluid to produce a mixed solution, and fermenting the mixed solution, thereby producing a fermented product; and a third step of preparing a liquid-type health supplement food containing 10-50 wt% of the fermented product with respect to the total weight. According to the present invention, provided are a liquid-type health supplement food using Curcuma longa which allows Curcuma longa beneficial to human body to be conveniently ingested, and by increasing the absorption of Cucurma longa, allows the functional components that Cucurma longa inherently contains to be sufficiently absorbed, and a preparation method of the same.
