To provide a fat composition in which enzyme activity lowering, which can occur due to heat applied during production of margarine or shortening containing glycolytic enzyme, is curbed; and a method of curbing activity lowering of the glycolytic enzyme due to heat applied during production by adding lactic protein to a fat composition containing glycolytic enzyme.SOLUTION: A fat composition of this invention contains glycolytic enzyme and lactic protein. And a method of curbing activity lowering of the glycolytic enzyme, the activity lowering being due to heat applied during production, includes adding lactic protein to a fat composition containing glycolytic enzyme.SELECTED DRAWING: None
