PROBLEM TO BE SOLVED: To provide a method for producing a delicious and easily edible food and a product using the scraps of pickled radish, which is a special product of Miyazaki Prefecture, as a raw material. SOLUTION: In the molding process of Takuan pickling production, scraps cut out as non-standard pieces are divided into two or four pieces, then sliced into 2 mm slices, semicircle or ginkgo biloba, and the frozen material is used as a raw material. After freezing, heat and thaw, dehydrate with a centrifuge, boil with sodium bicarbonate solution, cool with running water, dehydrate again, put it in lactose solution, heat and mix until dry, and heat. This manufacturing method consists of mixing rice flour with rice flour, frying it in vegetable oil, and deoiling the fried food with a centrifuge.
