摘要

To provide a deterioration inhibitor of abalone or turban shell suppressing reduction of texture or thinning of abalone or turban shell, which may be proceeded after landing of abalone or turban shell, and used for providing abalone or turban shell maintaining texture with crunchy and crispy texture and appearance felt by eating as raw.SOLUTION: There is provided a deterioration inhibitor of abalone or turban, containing at least one kind selected from a group consisting of Flammulina velutipes extract, yeast extract and barley extract. The extract preferably is contained at 50 to 100 wt.% by dry weight in whole dry weight of the deterioration inhibitor of abalone or turban. By using the deterioration inhibitor of abalone or turban, a solution for holding raw abalone or raw turban can be taken.SELECTED DRAWING: None
