PROBLEM TO BE SOLVED: To provide a poultry carcass tenderloin creasing device capable of creasing tenderloin from a cervical spine side end part to a soft chicken bone side end part, and causing no meat texture lowering of tenderloin due to that the clavicle bites into the tenderloin.SOLUTION: A poultry carcass tenderloin creasing device includes: a holding member which has an engagement part internally engaged with a poultry carcass upper half part chicken bone pleural cavity, and holds a poultry carcass upper half part chicken bone with tenderloin; a pair of first creasing mechanisms which approach from both sides to a poultry carcass upper half part chicken bone with tenderloin, and crease from the side the tenderloin from a first prescribed position near the clavicle and close to the soft chicken bone than the clavicle to the soft chicken bone side end part; and a pair of second creasing mechanisms which approach from both sides to the poultry carcass upper half part chicken bone with tenderloin, and crease from the side the tenderloin from a second prescribed position near the clavicle, close to the soft chicken bone than the clavicle, and close to the soft chicken bone than the first prescribed position, to the cervical spine side end part.SELECTED DRAWING: Figure 2
