PROBLEM TO BE SOLVED: To allow a general-purpose device to measure the chromaticity value and acid value of measuring object edible oil with accuracy sufficient for practical use.SOLUTION: A device (1) for measuring the degree of deterioration in edible oil includes: an imaging unit (11) for photographing a test piece to obtain image data; a storage unit (13) for storing correspondence relation (50-52) between the chromaticity value and acid value of the edible oil and the color value of the image data on the test piece; a chromaticity value acquisition unit (144) for acquiring the chromaticity value of the edible oil by referring to the correspondence relation on the basis of the color value of the image data on the test piece soaked in the edible oil; an acid value acquisition unit (145) for acquiring the acid value of the edible oil by referring to the correspondence relation on the basis of the color value of the image data on the test piece soaked in the edible oil and the acquired chromaticity value; and an output unit (16) for outputting the acquired chromaticity value and acid value.SELECTED DRAWING: Figure 2
