The present invention is characterized by containing bocaiuva, whey proteins (PSL) and prebiotics as main ingredients, in addition to presenting bocaiuva and PSL in quantities with potential action on human health, if ingested regularly. The bocaiuva is a fruit with a peculiar nutritional composition than that of the other fruits because it has a high concentration of lipids, of which the high concentration of oleic fatty acid (70%), and starch (unusual nutrient in fruits) stands out. Another differential of bocaiuva is the significant amount of highly bioavailable b-carotenoids. Whey protein is a source of proteins with rapid digestion and absorption, considered functional food due to its positive action in weight loss, glycemic control, improvement in the lipid profile and reduction of blood pressure, as well as antioxidant action. The protein bar in question was developed in order to ensure the characteristic flavor and aroma of the lyophilized integral bocaiuva, without the addition of synthetic dyes and aroma, in addition to bringing to the industrialized food market the option of a protein bar of high nutritional value and effect functional through a technological process capable of maintaining the natural molecular structure of the functional ingredients, as well as favoring a pleasant taste, aroma and texture of the final product.
