methods and / or techniques are described for the production of coffee fruit extracts based on coffee fruit, which allow better extraction and yield of usable aromatic constituents and nutritionally beneficial components (including polyphenols, antioxidants and / or sugars) from the fruit of coffee. specifically, the invention relates to a method of processing coffee fruit, comprising the steps of: (1) adding water to the coffee fruit or to any unroasted, green or pulp coffee beans, obtained from coffee fruit to form a suspension; (2) wet grinding of said suspension in several stages to an average particle size of 100 µm or less; and (3) subjecting said suspension to one or more separation and / or processing steps comprising at least separating the aqueous phase to obtain at least one coffee fruit extract selected from coffee fruit flavor, fruit oil of coffee, coffee fruit powder, coffee fruit juice, coffee pulp aroma, coffee pulp powder, coffee pulp juice, coffee aroma and green or roasted coffee powder.
