method of making a fermented drink, in particular a cereal-based fermented drink, the method comprising steps of: preparing the wort and boiling said wort, the boiled wort comprising a liquid fraction and a solid fraction; separation of the liquid fraction from the solid fraction; fermentation of the liquid fraction; maturation of the fermented liquid fraction to obtain the fermented drink in which the hop stem leaves and / or hop stem stems are added to the wort and kept in contact with the wort liquid fraction for a period of at least 20 minutes at a temperature ranging between 70 ° c and 100 ° c.
