Disclosed is the process of making cucumber tree jam comprising the following steps: washing and cutting the ends ofcucumber fruits, squeezing out of juices by pricking each fruit with toothpick or fork at several locations, soaking of fruits in water with lime overnight, in the next day, washing of cucumber fruits 3 times in clear water, blanching of cucumber fruits, squeezing gently of cucumber fruits, measuring of water enough to cover cucumber fruits, and adding of sugar to the fruits, boiling of cucumber fruits in syrup in low to moderate heat, stirring occasionally for 30 to 45 minutes or until the consistency of jam is achieved. Let it cool down before packing in a sterilized bottle.
