The present invention relates to the generation of modified 1-MCP nanobubbles with sugars for use in food having a size ranging between 50 and 600 nm. These nanobubbles exhibit a high degree of stability in an aqueous solution and make it possible to inhibit the action of ethylene in different biological processes. Additionally, they can reduce the action of ethylene in plant metabolism, making it less susceptible to water stress, low temperature stress, soil condition stress, inter alia. The present invention also relates to the method for preparing the modified 1-MCP nanobubbles with sugars and the different uses and applications thereof.
