The present invention relates to a method for manufacturing a mixed fermentation product of apple juice and Auricularia auricula-judae through the fermentation of yeast and lactobacillus. More specifically, it is confirmed that a period is shortened when proceeding complex fermentation rather than proceeding with lactobacillus single fermentation in a process of generating GABA by using a mixture of apple juice and Auricularia auricula-judae as a raw material. Among three conditions of the present invention, when proceeding complex fermentation using K. servazzii KM2017 and S. cerevisiae, it is possible to confirm that MSG is converted to GABA in a relatively short time. The fermentation material with enhanced functionality is expected to be utilized as a material of functional food and health food.
