The present invention relates to an aging solution for aging pork which makes pork flesh soft, removes bad smells, prevents discoloration, is beneficial to health by medical actions of active ingredients in medicinal herbs in intake, and cooks pork maintaining tastes while making pork moist, not hardening pork; a method for wet aging pork at a low temperature; and a cooking method of boiled pork using the same. According to the present invention, the method for wet aging pork at a low temperature comprises: a pickled product manufacturing step of pickling one or more fruits, one or more medicinal herbs and sugar to manufacture a picked product; a fermented pickled product preparing step of fermenting the manufactured pickled product for a predetermined period to prepare a fermented pickled product; an aging solution preparing step of diluting the fermented pickled product in water; an aging solution containing step of spraying the prepared aging solution to pork or sinking the pork in the aging solution to have the pork contain the aging solution; and an aging step of aging the pork containing the aging solution at 2°C for 1-2 weeks.
