The present invention provides a water jacket apparatus of a dispenser for keeping constant temperature of a biomaterial in a three-dimensional bioprinter and a multi-stage temperature control method of the apparatus. The three-dimensional bioprinter includes a dispenser configured to receive a biomaterial contemporarily and to eject the biomaterial downwardly through a nozzle, and a water jacket coupled to the dispenser, wherein the dispenser includes: a sheet-like base plate; a pair of syringe fixing portions fixed to the base plate, formed to protrude out from the fixed surface in the vertical direction, and disposed in the form of a cantilever with a predetermined interval; and a syringe fixed elastically through press-fitting into the syringe fixing portions and provided with a biomaterial-receiving space therein. In addition, the water jacket is coupled detachably to the base plate, disposed to three-dimensionally surround the syringe, provided with a water-receiving space therein, and has a water inlet and a water outlet.
