The present invention relates to a colored rice, which is coated with a color using a vegetable extract having excellent nutrients and efficacy, and is coated to have antibacterial and antioxidant components and a unique flavor, and to a method for producing the same, and more particularly, to a method for producing a functional colored rice and a functional colored rice produced thereby. The method for producing a functional colored rice of the present invention comprises the steps of: (1) firstly coating a polished rice by being immersed in or sprayed with any one selected from the group consisting of a cockscomb extract, a gardenia fruit extract, squid ink, a chives extract, and a beet extract; (2) inputting the firstly costed rice of the step (1) in a vacuum dryer to dry the same to have a moisture content of 15 to 20% (w / w); (3) secondly coating the rice dried in the step (2) by spraying a mixture mixed with an extract extracted from leaves, stems, or roots of a smilax, scorched-rice water, and water thereto; and (4) inputting the rice secondly coated in the step (3) in the vacuum dryer to have a moisture content of 15 to 20% (w / w).;COPYRIGHT KIPO 2020
