Additives which are free of palm-based solid edible oils and fats and free of palm-based emulsifiers, for use in the manufacture of edible toppings, and which are comprehensive on a dry weight basis:A non-palm-based edible oil or fat, comprising at least 70-caraway or non-hardened coconut oil;5-to 30% on an alpha-tending emulsifier on a non-palm basis;a protein-containing emulsifier; and25 to 60 hydrocarbons; where the alpha-tending emulsifier on a non-palm basis is a lactic acid ester of mono- and/or diglycerides of a vegetable oil on a non-palm basis, the fatty acids of the glycerides being saturated or unsaturated and the fatty acids having 6 to 30 carbon atoms; and where the alpha-tending emulsifier has been produced on a non-palm basis from hydrogenated non-palm vegetable oils and contains more than 75 percent of the fatty acid residues of stearic acid (C18:0).
