The present invention relates to a process for the manufacture of an ingredient comprising the combination of at least three milk proteins, comprising the mixture i) by the liquid route of micellar caseins A1, of milk serum proteins B1 and of denatured milk serum proteins C1, the milk serum proteins B1 being different from the denatured milk serum proteins C1, as well as the application of a step ii) during which at least one step chosen from the following steps is applied to the mixture obtained in step i) : a concentration step, an application step of at least 50 bars, a heat treatment step, and a combination of these. The present invention relates to the use of the ingredient associated with said process for the manufacture of a dairy product, and the dairy products comprising the ingredient according to the invention.
