Tests run in a commercial type rice dryer indicated shorter retention time along with increased air temperatures reduced operation time and maintained milling yields. Increasing either air temperature or airflow rate reduced operation time. Physico-chemical properties related to cooking behavior were unchanged by drying treatments.
