摘要

It is known that, upon the bombarding of an anticathode by cathode rays (a stream of electrons L, only a small part of the energy of the latter is transformed to x radiation. It is therefore very effective to use primary electrons. Investigations were continued with accelerated electrons and gamma radiation, which have a greater penetrating capability and high bac¬tericidal action. Today, organizations of many countries are studying radiation sterilization of food products. Part of the great interest in this new method of sterilization is due to the insignificant change in the tempera¬ture of the product during the process of irradiation, which permits sterili¬zation in the cold.
