We North Carolinians love our greens: collards, mustard, creasy, kale, spinach—the list goes on. No foodie-come-lately can claim credit for this, either. Greens have historically held an honored place at our dinner tables, next to the corn bread andblack-eyed peas. Everybody gives them the respect they deserve as "superfoods," bursting with vitamins and minerals.There's just one problem. What are we greens-loving organic gardeners supposed to do in the summer? Our tried-and-true greens grow best in the cool weather of spring and fall. By Memorial Day, the collards are bug-eaten, rank, and tough, and the spinachand mustard have simply bolted and died. Most experienced gardeners here don't even bother with greens in the hot months (except for the occasional Swiss chard fan).
