Processes for accelerating the ageing of rice are discussed, with reference to: methods for accelerating the ageing of new rice, and properties of rice aged by these methods; development of new dry heat technology; basic principles of dry heat technology for the accelerated ageing of rice; dry heat accelerated rice ageing equipment; and other potential uses of dry heat accelerated rice ageing technology.
