To explain it briefly, "aka" is red, but you must know some grammar here. "Aka" is a noun, and "akai" is an adjective. There is a subtle difference between an "aka" eye and an "akai" eye. Considering the usage of those two words, you learn that "aka me" may imply a bit unusual situation rather than "akai me" in the Japanese language. Or "Aka-me" sounds something special. For this reason, Japanese koi keepers prefer to use "Aka-me" for red eyes by albinism.
