The cold chain is inherently complex. Regardless of what point a perishable product is in transit, it is always susceptible to temperature abuse, including goods being poorly pre-cooled or excessively cooled. The numerous interruptions in the food supply chain, for instance, often result in having the perishables remaining too long in an open-air loading dock at a distribution center or retail store, above an acceptable control temperature setting at customs, or in the wrong sections of a multi-zonetrailer.
