Scrambled in omelets and sandwiched between buns, the new "superfood" is finding its way to the breakfast table and landing on lunch menus, according to a recent consumption report published by the Mushroom Council. A staple at the dinner table and holidays such as Thanksgiving and Christmas, mushrooms are becoming popular fare for breakfast and lunch meals. In fact, mushrooms are a leading ingredient in omelets, pizza, sandwiches and salads.
