Council Introduces Swapability to Schools To Meet New Meal Pattern Requirements

In January USDA announced new school lunch guidelines to provide healthier meals for children. The new guidelines require more fruits and vegetables and a minimum meat/meat alternate portion to be served to students each week. The Council has identified swapability as the perfect solution for schools struggling to meet the new requirements while keeping students full and happy. To introduce swapability to school foodservice directors, the Council exhibited at the School Nutrition Association Annual National Conference in Denver, CO in July. The Council developed a swappable 50 percent mushroom 50 percent ground beef meatball to sample at the conference tailored from the USDA School Foodservice meatball recipe. The response to the swapability concept was overwhelming. At the Conference, the Council was highly successful in presenting swapability to School Foodservice Directors.
